Sweet potato curry
This vegetarian recipe promotes healthy digestion. Sweet potatoes are a good source of fiber and rich in vitamins A, B6, B9, and C.

🥔 Ingredients:
✔️ 1 kg sweet potatoes
✔️ 500 g cooked chickpeas
✔️ 1 onion
✔️ 500 ml coconut milk
✔️ 300 ml vegetable broth
✔️ spices: turmeric, ginger, cinnamon, cumin, coriander
👨🍳 Preparation:
- Wash and peel the sweet potatoes, then cut them into pieces.
- Rinse and drain the chickpeas.
- Peel and chop an onion, then sauté it in an oiled skillet.
- Add the sweet potato, chickpeas, and spices to taste. Mix well.
- Add the coconut milk and the vegetable broth, which has been heated beforehand.
- Mix well and cook for 20 minutes over medium heat.
- Cook brown rice to serve with it.
