Clementine muffins
Here's a recipe using vitamin-rich clementines! These muffins are low in FODMAPs.

🍊 Ingredients:
✔️ 5 clementines
✔️ 25 g maple syrup
✔️ 150 g cornstarch
✔️ 2 eggs
✔️ 60 g butter
✔️ 1.5 containers coconut milk yogurt
✔️ 1 packet baking powder
👨🍳 Preparation:
- Preheat the oven to 350°F. Butter 6 ramekins.
- Melt the butter.
- Whisk the eggs with the maple syrup. Add the cornstarch and baking powder, mix well.
- Stir in the yogurt and melted butter.
- Peel the clementines, separate the segments and cut them into pieces.
- Add the clementine pieces to the batter and mix.
- Pour the batter into muffin tins. Bake for about 20 minutes.
