🍎 Ingredients:

✔️ 1 cucumber 

✔️ 200 mL coconut milk 

✔️ 1 tsp curry paste 

✔️ 1 onion 

✔️ 1 clove of garlic

✔️ Ginger to taste 

✔️ Coriander to taste 

✔️ Olive oil 

✔️ Salt 

✔️ Pepper  

👨‍🍳 Preparation:

  1. Peel the cucumber and cut it into small cubes. Set aside.
  2. Peel and chop the onion, garlic, and ginger.
  3. Sauté the onion, garlic, and ginger in olive oil. 
  4. Add the teaspoon of curry paste and the diced cucumber. 
  5. Add the coconut milk. Simmer over low heat for 10 minutes. 
  6. Add salt and pepper to taste.
  7. Sprinkle with cilantro. Enjoy.
