Starter

🥗 Ingredients:

✔️ 2 persimmons

✔️ lamb's lettuce or green salad

✔️ 1 beet

✔️ a few walnut halves

✔️ salt, pepper

✔️ walnut oil

✔️ cider vinegar

✔️ pomegranate seeds

👨‍🍳 Preparation:

  1. Wash and peel the persimmons and cut them into cubes.
  2. Wash and dry the lettuce. Wash the beetroot, peel it, and cut it into pieces.
  3. Prepare the dressing by mixing the walnut oil, vinegar, salt, and pepper in a bowl.
  4. Toss the salad by mixing the vegetables together. Season just before serving.

  1. Cut the beets into pieces.
  2. Crush the walnut kernels.
  3. Mix the beets, walnuts, yogurt, and garlic in a salad bowl. Season with salt, pepper, and vinegar.
  4. Leave to rest in the fridge for a few hours.

Starter

 🥬 Ingredients:

✔️ 2 chicken cutlets

✔️ 1 lemon

✔️ 4 tablespoons gluten-free breadcrumbs

✔️ 1 pinch of chili powder

✔️ 1 egg

✔️ 50 g raw milk tomme cheese

✔️ 1 head of lettuce

✔️ salt

✔️ freshly ground pepper

 

For the sauce:

✔️ 4 tablespoons of fromage blanc

✔️ 2 teaspoons mustard

✔️ Juice of 1 lemon

👨‍🍳 Preparation:

  1.  Slice the chicken breasts, place them in a dish, and pour the juice of 1 lemon over them. Marinate for 1 hour in the refrigerator.
  2.  After this time, drain and dry them.
  3.  Pour the breadcrumbs onto a plate and season with chili pepper, salt, and pepper.
  4.  Beat the egg and dip the sliced chicken in the beaten egg, then in the breadcrumbs.
  5.  Pour 1 tablespoon of oil into a frying pan and cook the chicken strips.
  6. In a bowl, mix the cottage cheese, mustard, lemon juice, salt, pepper, and spices (if desired). Mix well.
  7. Dice the cheese.
  8. Arrange the salad, chicken, cheese, and sauce in small bowls or on plates.

🥬 Ingredients:

✔️ 2 black radishes

✔️ 1 Chioggia beet

✔️ 1 red meat radish

✔️ 2 clementines

✔️ 1 shallot

✔️ 50 g golden raisins

✔️ 2 tablespoons unpasteurized apple cider vinegar

✔️ 6 tablespoons walnut oil

✔️ Fleur de sel

✔️ Espelette pepper

👨‍🍳 Preparation:

Preparation of the vinaigrette

  1. In a bowl, combine the fleur de sel, chili pepper, and vinegar. Mix and add the oil.
  2. Peel and slice the two clementines.
  3. Wash and brush all the vegetables.
  4. Peel and mince the shallot.
  5. Grate the vegetables.
  6. Place everything in a salad bowl, add the raisins and a few clementines. Pour in the dressing and mix. Adjust the seasoning.
  7. Pour into small bowls and garnish with chopped sage leaves and clementines. Rehydrate the raisins if desired.

🥝 Ingredients:

✔️ 15 g potato starch

✔️ 40 cl almond milk

✔️ 20 cl thick soy milk

✔️ 30 g agave syrup

✔️ 1/2 teaspoon agar-agar

✔️ 2 kiwis

✔️ 1 avocado

✔️ 5 cl water

👨‍🍳 Preparation:

Preparation of the dressing

  1. In a saucepan, combine the almond milk, cornstarch, agave syrup, and agar-agar. Heat while stirring for about 8 minutes over low heat. Remove from heat, add the plant-based cream, and mix well.
  2. Pour into small glasses and chill for 2 hours.
  3. Once the cream has set, prepare the coulis.
  4. Peel the kiwis and avocado.
  5. Pour everything into a blender and blend. If necessary, add a little water and agave syrup. Mix well.
  6. Pour the coulis over the set panna cottas and refrigerate until ready to serve.
  7. To serve: add kiwi slices or a few flowers to your panna cottas.
