Bleu-Blanc-Coeur joins the I Love Microbiome community 

Committed to improving health through healthy eating, the Bleu-Blanc-Coeur association has joined the I Love Microbiome movement. This movement aims to promote nutrition stakeholders who produce, grow, or cook with products that promote a balanced, rich, and diverse microbiota. The I Love Microbiome community brings together players committed to a social initiative and a healthy, sustainable approach. The I Love Microbiome community is committed to following nutritional recommendations based on scientific knowledge for its products.

 

Omega-3: its role in the microbiota

Bleu-Blanc-Coeur and Nahibu want to explore the links between omega-3 and the microbiota in order to provide personalized nutritional solutions based on knowledge of the microbiota.

I have been working on omega-3 and its impact on inflammation and immunity for 30 years. Omega-3 intake is beneficial, so it is important to know where you stand in order to adapt your nutrition, emphasizes Pierre Weill.

🥦 Ingredients:

✔️ 2 onions

✔️ 2 cloves of garlic

✔️ 700 g broccoli

✔️ 500 ml vegetable stock

✔️ 500 ml coconut milk

✔️ Olive oil

✔️ Salt

✔️ Pepper

👨‍🍳 Preparation:

  1. Wash and cut the broccoli into florets. Chop the garlic and onions.
  2. In a saucepan, sauté the garlic, onion, and broccoli florets in a drizzle of olive oil over medium heat.
  3. Add the vegetable stock and coconut milk. Cover and cook for about ten minutes.
  4. Season and blend to achieve your desired texture.
  5. Add toasted bread croutons on top to garnish!

🥑 Ingredients:

✔️ 2 salmon steaks

✔️ 500 g asparagus

✔️ 2 cloves of garlic

✔️ 1 lemon

✔️ Olive oil

✔️ Honey

✔️ Soy sauce

✔️ Ginger

👨‍🍳 Preparation:

  1. Chop the garlic cloves and grate the fresh ginger.
  2. In a bowl, mix 5 tablespoons of olive oil, 5 tablespoons of soy sauce, and 3 tablespoons of honey. Add the garlic and ginger to finish the marinade.
  3. Place the salmon in the marinade and refrigerate for 30 minutes.
  4. Pour the marinade into a frying pan and caramelize. Set aside.
  5. Place the asparagus on a baking sheet lined with parchment paper.
  6. Bake for 15 minutes at 350°F with a few slices of salmon.
  7. Precook the salmon in the pan.
  8. Add the salmon to the asparagus at the end of cooking.
  9. Remove from the oven and pour the marinade over the top.

🍞 Ingredients:

✔️ 250 g potato starch (or cornstarch)

✔️ 225 g chickpea flour

✔️ 50 g ground almonds

✔️ 110 g whole almonds

✔️ 25 g psyllium powder

✔️ 8 g dry baker's yeast

✔️ 1 teaspoon sugar

✔️ 10 g baking soda

✔️ 6 g coarse gray salt

✔️ 45 cl lukewarm water

👨‍🍳 Preparation:

  1. In a ramekin, pour the dry yeast with a little warm water and sugar, mix and leave to rise for 10 minutes.
  2. In a food processor, mix all the dry ingredients (you can lightly crush the almonds), the diluted yeast, and a little water at 38°C. Mix well and add the remaining water to obtain a smooth dough. Knead for 10 minutes.
  3. Pour into a lined bread pan or cake pan, cover with a clean cloth. Let rest for 1 hour in the oven at 35°C (th.1-2).
  4. Remove from the oven (be careful of drafts), preheat the oven to 210°C (gas mark 7).
  5. Place a ramekin of water in the oven and bake the bread for 50 minutes.
  6. Remove and leave to cool on a wire rack.
