✔️ 1 cucumber
✔️ 200 mL coconut milk
✔️ 1 tsp curry paste
✔️ 1 onion
✔️ 1 clove of garlic
✔️ Ginger to taste
✔️ Coriander to taste
✔️ Olive oil
✔️ Salt
✔️ Pepper
👨🍳 Preparation:
- Peel the cucumber and cut it into small cubes. Set aside.
- Peel and chop the onion, garlic, and ginger.
- Sauté the onion, garlic, and ginger in olive oil.
- Add the teaspoon of curry paste and the diced cucumber.
- Add the coconut milk. Simmer over low heat for 10 minutes.
- Add salt and pepper to taste.
- Sprinkle with cilantro. Enjoy.
